Our couscous, a traditional family dish, is prepared with an extensively hand-rolled semolina. The tagine, typical of Moroccan cuisine, is a stew of spiced meat and vegetables prepared by slow cooking in a tagine – a shallow earthenware cooking dish with a tall, conical lid – over a coal fire. The stew can be prepared with many different ingredients, such as lamb with prunes and almonds, or lemon chicken. Finally, remember that the national drink is mint tea.
